The Benefits of Freshly Roasted Coffee

To prepare a delicious cup of coffee, it must be freshly roasted. Stale coffee has a flat and unsaturated taste with an unpleasant aftertaste. This occurs when coffee has prolonged exposure to oxygen, either due to prolonged storage or long periods after roasting.

During the roasting process, several chemical reactions take place. Let's highlight three crucial stages: the "Drying" phase, the "Maillard Reaction," and the "Caramelization" stage, also known as the "Bean Development" stage.

In this article, we will explore what happens to the beans during roasting and why it's preferable to enjoy freshly roasted coffee.

 

WHAT HAPPENS TO THE BEAN DURING COFFEE ROASTING

  • Drying: During this stage, excess moisture is evaporated from the beans. It is crucial to properly and thoroughly heat the beans from the inside. Setting the right temperature parameters during loading the beans into the drum is key, taking into account the specific batch parameters. The main goal is to heat the beans thoroughly from the inside.

  • Maillard Reaction: It occurs approximately at 110 °C and lasts up to 180 °C. At this stage, amino acids begin to interact with sugars, forming numerous aromatic compounds such as pyrazines, furans, ketones, cafestol. All these compounds contribute to the flavor. For a coffee roaster, it is essential to maximize the potential of each bean.

  • Bean Development or Caramelization: It begins around 180 °C due to heating during coffee roasting, causing a breakdown of sugar molecules and the formation of new chemical compounds, such as bitterness, acidity, and aroma. Roasting is done for espresso or filter coffee.
