Colombia EL Mirador

NATURAL FERMENTATION WITH STRAWBERRIES

Coffee cherries are placed in tanks without access to oxygen for 60 hours, where fermentation begins with the activation of microorganisms and the release of CO2. After that, the leaven, which was previously prepared on the basis of coffee with strawberries, is added in the ratio of 10 liters per barrel and left for 270 hours.

After 330 hours, the coffee is removed from the barrel and moved to the drying area, where its final moisture content will be between 10.5 and 11%. Then the berries are collected in bags and stored like this for several months. At the last stage, the coffee is sent to the haller to remove all the upper layers. The final product is packed in vacuum bags and sent for export.
